Quick & Easy Lemon-Blueberry Crumble Bars

On Sunday’s, I typically meal prep for the week and try to experiment with new recipes. This week, I set out to search for a new quick and easy blueberry recipe to try. Thankfully, I stumbled across Joyful Healthy Eats and was able to find a yummy blueberry recipe to die for!

I cannot wait to wake up every morning this week to munch on one of these bars on my way to work. I hope that you are able to try this blueberry recipe in your homes and bring in a new yummy breakfast, snack or even dessert for your families.  


Crust & Crumble Ingredients 

  • 6 tablespoons unsalted butter, melted
  • 1 1/2 cups flour
  • 1 1/2 cups regular old fashioned oats 
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 1 teaspoon fresh lemon zest
  • pinch of salt
  • pinch of cinnamon

Blueberry Filling Ingredients

  • 2 cups of fresh blueberries
  • 1/4 cup brown sugar
  • 2 small lemons (for freshly squeezed lemon juice)
  • 1 teaspoon flour

Cooking Instructions 

  1. Preheat oven to 350.
  2. Spray an 8×8 pan with cooking spray for easy removal.
  3. Crust & Crumble: mix together in a large bowl melted butter, flour, oats, honey, brown sugar, lemon zest and salt. Finished mixture should be crumbly.
  4. Set aside about 1 cup of mixture to use as the crumble.
  5. Spread the remaining mixture out in the prepared pan.
  6. Use your fingers or a spatula to press into the bottom of the pan so the crust is an even layer.
  7. Blueberry Filling: mix together in a small bowl blueberries, brown sugar, squeezed lemon juice, and flour. 
  8. Add the blueberry filling on top of the crust and spread evenly.
  9. Crumble: Evenly break crumble into pieces with your fingers to sprinkle over the top of the blueberry filling. 
  10. Dust the top of crumble with cinnamon for flavoring.
  11. Bake for 50 minutes.
  12. Remove the bars from the pan and let sit for 5 minutes before finishing cool down in refrigerator for 15 minutes. 
  13. Cut and serve.
